Ingredients:
- Low fat syrup
- Sugar (100 grams)
- Peanut butter (200 grams)
- Vanilla extract
- A big egg
- 1 tablespoon egg white
- 3 quarters cup whole-wheat
flour
- 90 grams of white flour
- 5 grams baking soda
- Sprinkle of salt
- Oats
- Dried fruit - raisins, currants etc
- 2 and a half cups higher fibre toasted oat
cereal
Preparation:
- With two baking sheets, cover in low fat oil and pre
heat the oven to 380 degrees.
- Mix the syrup, sugar, vanilla extract, egg
substitute (& egg), peanut butter.
- Separately, mix the flour (whole wheat & white),
salt and baking soda. Combine to the first mixture until blended.
- Add the oats & toasted oats, fruit and
stir.
- Add half a cup worth of dough onto the baking sheets.
Flatten out and maintain the shape, bake for approximately 11 minutes until crispy on the
edges.
