Ingredients:
- ¼ cup mayonnaise,
low-calorie
- 2 cups asparagus tips, cut
diagonally
- Fresh lettuce
leaves
- ¼ tsp curry
powder
- 1/8 tsp fresh ground
pepper
- 2 cups boneless chicken breast, skinless,
cooked and chopped
- 2 tbsp toasted and sliced
almonds
- ½ cup red bell pepper, chopped and
seeded
- ¼ cup yoghurt, plain and
non-fat
- ¼ cup chopped
cilantro
- 1 tsp lemon
juice
- ¼ tsp salt
Preparation:
- For about 2 minutes, steam the asparagus tips
or until crisp-tender.
- Combine in a medium bowl low-calorie
mayonnaise, curry powder, salt, plain yoghurt and salt. Whisk the mixture together until
creamy.
- Add boneless chicken breast, fresh cilantro,
steamed asparagus and toasted almonds and hurl to coat.
- Dish up on fresh, chilled lettuce
leaves.
